Jim Rouse's Crab Cakes

 

 

 

 

This recipe was found on a recipe card, available in the top level of the American Visionary Art Museum's Jim Rouse Visionary Center (along with other recipes):


1 Pound crab meat (backfin or lump preferred)

MIX THE FOLLOWING INGREDIENTS IN A BOWL:

2 Tablespoons Mayonnaise
1 Egg, beaten
1/2 Teaspoon Salt
1/2 Teaspoon Dry Mustard 
1 Dash Worcestershire
1 Dash Tabasco
1 Teaspoon Lemon Juice
1 Teaspoon Old Bay Seasoning
6 Crackers, crushed (no bread!) 


Step 1:  Mix crab meat to the above mixture.  Turn it all together with your hands, very gently -- to avoid breaking the crab lumps.
Step 2:  Make into slightly flattened cakes.  Coat lightly with butter.
Step 3:  Cook in oven or under broiler until light brown on top.
