Annapolis Seafood Market Jumbo Lump Crab Cake

Last week, we reviewed Annapolis Seafood Markets' Backfin crab cakes.  Based on a tip from friend of the CCR Kerry G, we set forth to see just how good this place was.  And when we got there, we discovered that there were two different kinds of crab cakes on offer.  If you missed the review, Annapolis Seafood Markets is a chain of seafood markets with 3 locations around the Baltimore/Annapolis area.  Their stores offer a variety of fresh seafood and prepared items available for carry out.  Annapolis Seafood tends to be a local's secret, with their seafood being bought and prepared fresh daily.  Seeing as how the backfin cakes were really good, we just HAD to try the jumbo lump cakes.  Do they meet or exceed the standards set forth by the backfin cakes?  Read along and find out!

Jumbo lump crab cakes are available in 4oz and 8oz sizes at the store, but can only be ordered in 8oz size online.  No instructions were given along with the crab cake, although with jumbo lump cakes you are better off with broiled or oven baked.  We chose to bake our crab cake at 350 degrees F for 25 minutes.

The jumbo lump cakes are all Maryland Blue backfin meat, with no fillers, simply held together with a binder made from an imperial sauce.  All crab cakes are not only prepared by hand, but also hand packaged.  Crab meat composition is mostly jumbo lumps of crab with a few broken pieces.  

When you take your first bite, all you can taste is that sweet Maryland Blue crab that us Marylanders have come to know and love.  Imperial sauce is pretty much non-existent except to hold things together and provide some moisture.  There is a little bit of spice to it, but that tiny bit of spice makes a point to stay out of the way of that precious crab flavor. 

The flavor of the Blue crab is simply amazing, making this one of our favorite crab cakes.  The jumbo lump crab meat tastes meatier than its backfin cousin, and is better off for it.  A bit more spice in the sauce can help with flavor complexity, but with crab this flavorful, I doubt you'd need it.  Squirting some lemon juice on top helps to accentuate the flavor of the crab.
