Weekly reviews of crab cakes around the MD and DC area

Chef Driven DC

Once nice days, nothing beats going outside for lunch. And working close to Farragut Square, the food trucks are always near, rain or shine. So on this particular springish day in February, the CCR found themselves checking out the scene, and came across a truck that was featuring jumbo lump crab cakes. "Champagne taste on a Sarsaparilla budget" That truck would be Chef Driven DC. Now, crab cakes aren't always on the menu, but this week they were, and we venture to think they'll be on the menu again. So are they worth the wait, or should you try something else? Read on and find out!

The crab cake sliders are served on a brioche bun, topped with sauce remoulade, and served alongside a petite arugula salad.  The side of the truck proudly announces that the crab meat comes from J.M. Clayton in Cambridge, MD. Always nice to know a source!

The cake is made of of mostly jumbo lumps of crab, bound together with a mayonnaise and bread base with some greens and spices mixed in. The binder is very light, but still keeps the cake moist. The brioche is the perfect size for the cakes, and while it has some firmness, it doesn't try to fight the bite and squish your crab cake out of the bun.

We were quite impressed with a crab cake from a truck! The crab meat has a nice sweetness to it, with a good, meaty texture. Any spicing used frames the crab taste without getting in the way. The remoulade, however, is quite assertive. Essentially a chunky tartar sauce, it was overpowering even though we scraped most of it off. There was a good bit put on our sliders, so we can only imagine how much more powerful the flavor would be had we left it all on. All this cake needs is itself, some lemon, and that tasty, tasty roll. Order the sauce on the side so you can compare yourself.
