Weekly reviews of crab cakes around the MD and DC area

Sly Horse Tavern

The Sly Horse Tavern has been around since 1985, located on Crofton's Village Green.  The restaurant may look like a historic house from the 18th century, but it is really a replica of Colonial Williamsburg's Raleigh Tavern.  They bill themselves as "modern American" cuisine, even if the menu has a bit of a German influence.  Just don't ask about the name -- it's a secret they aren't willing to share.  But one secret the CCR is willing to share is their crab cakes.  How were they?  Read on!

The Chesapeake Crab Cake entree is served with potato, vegetable, and rolls (although our potato was substituted with rice).  Also available are fried Chesapeake Crab Balls on the appetizer menu.  Entree only comes broiled, and is market price.  Served with lemon wedge and what appears to be a spicy aioli (maybe spiced with Old Bay?).

The crab cake is comprised of jumbo lump crab meat held together with what appears to be bread and mayonnaise.  Crab is in lumps amongst some broken pieces.  Binder is smooth and creamy with a bready texture.  Not much by way of spicing.

Crab has a really good flavor to it, but the binder ends up being a bit one note.  While there is a bready texture to the cake, it doesn't really have much flavor.  You can only really taste the crab, and while it is tasty, there should be a little more flavor complexity that doesn't come in the form of a side sauce.  The centers of our cakes were a bit mushy, so there could have been a little less binder and possibly also have been cooked a bit longer.
