Bluestone

BlueStone is a locally owned and managed seafood restaurant in Timonium, MD. Not quite on York Rd., BlueStone is located near the fairgrounds, but off the beaten path to the point that you've probably been near it several times and never known it. They've earned Trip Advisor's Certificate of Excellence for 2014, and a nod from Baltimore Magazine's Best Crab Cakes of 2009. We guess you could consider them a "hidden gem", if you will. But the real question is: how have BlueStone's crab cakes come since 2009? Read on and find out!

Crab cakes at BlueStone these says come in the form of a sandwich, a double entree, or as part of a combo. All crab cakes are 5 oz. in size, made with jumbo lump and colossal crab meat, and mixed with house seasonings. The sandwich is paired with fries and served on your choice of potato roll or crackers; the double entree comes with asparagus and corn pudding; the filet and crab cake combo is served with garlic mashed potatoes, asparagus, and a side of béarnaise. Each option comes with your choice of cocktail or tartar sauces.

The crab cake is packed full of crab! There are big lumps of crab mixed amongst broken pieces, about a 50:50 ratio. All of that crab is bound together with a mayonnaise and bread binder. The result is a moist crab cake that is packed full of flavor.

The crab meat is super sweet and packs a punch, which is nice considering "colossal" crab typically means blue swimmer. The binder and spices create layers of flavor without taking your attention away from the crab. There isn't much binder, mind you, but the moisture level is spot on. What few spots of binder that you do encounter are almost eggy in texture, but the presence of large lumps of crab takes your attention away. The blend of house spices was also a treat, seeing that they got the delicate balance of flavors just right to accompany the crab flavor well.

There really isn't anything we would change about this crab cake, other than making sure the consistency remains the same throughout the year. When crab cakes aren't market price and include colossal crab, that usually means the ratio could vary based on various factors. We'd hate to make a return visit and receive a lesser quality crab cake, but judging by the quality of our other meals, we're fairly certain that won't be a problem.
