Rip's Country Inn

Rip's Country Inn has been a local establishment since 1952, and has since grown to encompass a restaurant, liquor store and deli.  The interior decor fits the exterior, with a seating area that looks like horse stalls, and antiques adorning the walls.  They also pride themselves on making everything from scratch, which lends itself to their homestyle feel.  On their menu are the Maryland Crab Cakes.  Does being home made make them worth the visit?  Let's give them a try and find out!

Rip's Maryland Crab Cakes are two backfin cakes lightly fried and served with roasted garlic aioli, fries and cole slaw.  You can also get them broiled, in which case they are served with lemon thyme beurrediv blanc sauce, side salad and rice pilaf.  Of course, the sides are just the defaults for the cooking style.  You can get the rice pilaf with the fried crab cakes, and so forth.  You rebel.  Crab cakes are market priced.

Don't let the backfin crab meat fool you -- these cakes are tasty!  The crab has a wonderful flavor, and while mostly broken up, is to be expected from backfin meat.  There is hardly any filler in these cakes, just crab meat and a light amount of spicing.  Good bit of moisture to the cake, almost on the border of being too moist.  Maybe frying them would be better.

On a side note, you really don't need the sauce at all.  Maybe just order it on the side so you can get a little wild and crazy.  A bit more spice in the cake would help make a bit more of a diverse flavor profile.  But despite those little niggles, the cake itself was well worth the trip.
